The premium quality of pure New Zealand pasture-raised venison had long been a culinary trade secret when a group of visionary New Zealanders identified the need to protect this natural resource with it’s own brand designation. Just as the distinction of Champagne conveys a superior qualty and separates the product from other sparkling wine, this new brand would come to convey the supremacy of New Zealand pasture-raised venison.

Cervena was established in 1991, fast forward to today and only a handful of specialised venison marketers in New Zealand are licensed to use the Cervena brand mark. To qualify as Cervena, farms must meet strict conditions in quality assurance and production, the animals must be under three years old and have access to New Zealand’s clean, pure pasture all year round. The few farms that meet these standards are known to produce the finest cuts of venison in the world.

Some 1500 New Zealand farmers raise European Red Deer, North American Elk and Fallow on open pasture and fresh forage to ensure optimal growth and welfare. Deer nutrition is carefully managed to produce flavorsome delicious meat. Besides grass and herbs, deer are fed kale, fodder beet, swedes in the winter, and silage and small amounts of grain over the summer if it is dry.

Our farmers do not use hormone growth promotants or growth-promoting antibiotics. We take the health and wellness of our animals seriously and provide expert veterinary care when it is needed. To ensure consistency and quality, Cervena must also be processed to industry-agreed standards.
